Orzotto The first course is a very original,
tasty and delicate, just a little bit longer than in
cooking rice, but very appetizing
INGREDIENTI
Pumpkin, Garlic, Pearl barley, Butter,
Olive Oil, Onions, Cinnamon,
Mushrooms, Asiago, white pepper,
vegetable broth, salt
PREPARAZIONE
To cook the orzotto with pumpkin
cream started preparing the cooked pumpkin in
the microwave with water and covered with plastic
wrap.
Th en go to pumpkin mill.
Roasted onion with a little garlic in the olive oil,
add the pumpkin soup cook 5/6 minutes, add a
little cinnamon and salt, then toast and proceed as
for the cooking the risotto. Aft er about 15 minutes,
add the mushrooms, stir in the diced asiago cheese
and a bit of parsley and serve hot.
You can also serve with a cheese fondue instead of
asiago diced.
